Macanese cuisine (Portuguese: Gastronomia Macaense) is the culinary culture of the Macanese people. It is based on Portuguese cooking methods and incorporates the strengths and customs of various regional cuisines.
Macanese recipes are typically passed down within families and rarely made public, leading some dishes to risk being lost. Their cooking techniques were listed on Macau's Intangible Cultural Heritage Inventory in 2012 and are protected and promoted by government legislation.
Generally, cooking Macanese dishes requires a longer preparation time and more advance work. The techniques blend Chinese and Western methods, including frying, stir-frying, boiling, deep-frying, braising, stewing, baking, roasting, and steaming.
This workshop invites Chef Diana Sousa, who has years of experience in cooking and teaching Macanese cuisine, to teach and share a series of classic Macanese dishes.
Each class will share a complete meal from appetizer to dessert!
